This Cherry Tomato, Olive, and Pecorino Pasta recipe is a delicious combination of flavours and textures. 1 onion, finely chopped
2 garlic cloves
500 ml (2 cups) cream
2 x 250 g multicoloured cherry tomatoes, halved
125 ml (1/2 cup) olives of your choice
500 g linguine pasta, cooked according to packet’s instructions
Salt and black pepper, to taste
Pecorino cheese, shaved, to garnish
Fresh basil, to garnish
Directions
Heat a frying pan with a dash of olive oil on a medium heat and sauté the onion for about 5 minutes. Add the garlic and sauté for another 1-2 minutes while stirring. Add the cream and allow to reduce for about 8-10 minutes.
Add the cherry tomatoes, stir and allow to heat through for about 5-8 minutes. Finish with olives and season to taste.
Combine the sauce with the cooked pasta and finish with shaved Pecorino cheese, fresh basil and black pepper.
