4 chicken breasts or leftover roast chicken (in pieces of shredded)
15ml (1 Tbsp) BBQ spice
60g wild rocket leaves
1 mango, cubed
3 – 5 radishes, thinly sliced
1 avocado, peeled and sliced
3 red spring onions, finely sliced
*Optional – 1 red chilli, deseeded and finely sliced
Lime or Lemon wedges to serve
Homemade Aioli
4 garlic cloves, peeled
1 egg yolk
5ml (1 tsp) Dijon mustard
Pinch of salt
125ml (½ cup) Food Lover’s sunflower oil
125ml (½ cup) Food Lover’s Signature Extra Virgin Olive Oil
Fresh lemon juice
Freshly-ground salt and pepper
Directions
Chicken Salad
Rub the chicken breasts with BBQ spice and season with salt and pepper.
Heat a large frying pan with 15ml olive oil on medium to high heat. Fry the chicken breasts for about 5 to 7 minutes per side or until fully cooked. Slice and set aside.
To construct the salad; arrange the wild rocket onto a large platter. Top with the chicken, mango, radish, avocado, spring onions and chilli. Serve with the aioli and lime wedges.
Homemade Aioli
To make the aioli; blend together the garlic, salt, egg yolk and mustard in a food processor.
Keep it running, and slowly add the oils until the consistency turns thick.
Stir in a squeeze of lemon juice and season to taste.
