375ml (1 ½ cups) couscous
375ml (1 ½ cups) boiling water
½ cucumber, finely diced
½ red onion, finely chopped
2 tomatoes, deseeded and finely chopped
125ml (1/2 cup) Knorr Creamy Greek Salad Dressing
15ml (1 Tbsp) butter
400g halloumi cheese, sliced
Salt and black pepper, to taste
Directions
In a medium sized bowl, add the couscous and boiling water. Cover with plastic wrap and steam until all liquid is absorbed. Season to taste with salt and pepper, set aside to cool.
In a large salad bowl, combine the couscous, cucumber, red onion, tomato and Creamy Greek Salad Dressing. Season with salt and pepper to taste, toss well.
Place a griddle pan on medium-high heat and add the butter. Fry the sliced halloumi on both sides until golden brown.
Finish the salad with fried halloumi and enjoy!

Couscous Cooking:
Fluffier Couscous: For an even fluffier couscous, use a fork to gently separate the grains after they’ve finished steaming.
