Better than take-out, this egg-fried rice has a Christmas spin…because why only enjoy gammon on Christmas?! Enjoy gammon all season and get creative in the kitchen. This delicious recipe featuring egg fried rice, gammon and almonds – coming together to form the ultimate Asian flavours and a variety of textures. It doesn’t have a long roasting time either, ’cause this gammon is pan-fried in a citrus glaze rather than roasted…you can cook this up in 30 minutes or less, and most importantly it’s utterly delicious.
This recipe can also be made (even quicker) using leftover gammon and rice from your roast!

For the Egg Fried Rice:
2 large bell peppers, diced
6 multicoloured carrots, peeled and sliced
150 g frozen peas
2 cm ginger, peeled and grated
1 garlic clove, grated
800 g cooked Tastic Long Grain White Rice
4 eggs, beaten
Salt and black pepper, to taste
For the Orange Glazed Gammon:
600g cooked gammon
30ml (2 Tbsp) honey
30ml (2 Tbsp) soy sauce
Zest and juice of 2 oranges
To Finish:
60ml (¼ cup) You First Almonds, chopped and toasted
2 spring onions, thinly sliced
30ml (2 Tbsp) sesame seeds, toasted
Sesame oil, to taste
Micro greens, to taste
Lime wedges, to serve

For the Egg Fried Rice:
Heat a large frying pan with a dash of olive oil and add the peppers, carrots, frozen peas, ginger and garlic. Fry for about 4-5 minutes on a moderate heat until bright and cooked. Add the rice and fry for a minute or two. Using a spatula make a well in the middle of the rice in the pan and add the eggs, stir the egg into the rice while cooking. Season to taste.
For the Orange Glazed Gammon:
Cut the gammon into small cubes and add to a frying pan on a moderate heat along with the honey, soy sauce and orange zest and juice.
Cook while stirring for about 10-12 minutes or until sticky.
To Finish:
Serve the egg fried rice with the orange glazed gammon and garnish with almonds, spring onions, sesame seeds, sesame oil, and micro greens. Serve with lime wedges.
