Microwave 7 brown bananas in the microwave for 2 minutes. This will release more sweetness of the bananas. At this stage, set your oven to 180°C on fan.
In a large bowl peel and mash together the bananas, cinnamon sugar, vanilla extract, cinnamon extract, Greek yogurt, orange juice, almond milk and the soft butter. Stir with a whisk until everything is well incorporated. Leave some lumps in the bananas for a nice texture in your bread.
In a separate bowl, using an electric mixer, beat the two eggs and brown sugar until fluffy and then stir it into the other wet ingredients. Don’t overmix at this stage. Keep the batter nice and fluffy a few lumps in the batter are no problem at all.
Into the wet ingredients, sift in the self-rising flour and cake flour, backing powder, salt and mixed spice powder. Incorporate the dry ingredients until you have a nice thick batter.
Lastly add the dark and white chocolate chips and fold them in gently.
Coat a large loaf pan with oil and add in the banana brad batter. Bake for 40-50 min or until a toothpick comes out clean.
Let the Banana Bread cool to room temperature before removing it from the loaf pan. Slice up your bread and serve its slightly toasted with some fresh butter.
