The colours of this salsa add a pop to any dish! A fruity, fresh salsa to add zest and balance to your BBQ dishes like ribs or sticky wings. This pineapple salsa is also a great addition to grilled crostinis or tacos!

½ large pineapple
1 pomegranate
2 spring onions
Handful coriander
Zest and juice of 1 lime
15ml (1 Tbsp) olive oil
Salt and pepper, to taste
Directions
Peel the pineapple and cut into small dice.
Remove the pomegranate rubies from its skin.
Mix all together.
Add the lime zest and juice, as well as the olive oil.
Season to taste.
Additional Notes
If pomegranates are out of season, you can substitute them with chopped tomatoes, or chopped red pepper.
