Gourmet Beef Burger Toppings

Burgers

• 4 Burger Buns
• 4 x 100% beef burger patties

BACON, BRIE AND BLUEBERRY BURGER WITH CARAMELISED ONIONS

• 12 rashers of streaky bacon 8 slices of Brie cheese
• 8 slices of Brie cheese
• 4 heaped teaspoons of blueberry jam
• 1 large onion halved and thinly sliced
• 1 1/2tbsp extra virgin olive oil
• 1/2 tbsp butter
• 1 tsp sugar
• 1 large tomato sliced into 4 thick slices
• 8 butter lettuce leaves

CARAMELISED APPLE AND BLUE CHEESE BEEF BURGER WITH RED CABBAGE SLAW

• 4 thick slices of strong cheddar cheese
• 1 large onion halved and thinly sliced
• 1 1/2tbsp extra virgin olive oil
• 1/2 tbsp butter
• 1 tsp sugar
• 1 cup tomato sauce
• 1 tbsp apple cider vinegar
• 1/2 cup maple syrup
• 1 tbsp jimmy’s sauce
• 1 tsp tabasco sauce
• 1 clove garlic crushed
• 1 large tomato sliced into 4 thick slices
• 4 large gherkins sliced lengthways

CLASSIC AVO AND BACON BEEF BURGER WITH SWEET BASIL TOMATO RELISH

• 1 ripe avocado cut into slices lengthways
• 8 rashers of streaky bacon
• 1 onion chopped
• 2 cloves garlic chopped
• 1 tin chopped tomatoes
• 1 small handful basil leaves
• 3 tsp sugar
• 1 tbsp extra vigil olive oil
• 1/4 cup tomato sauce
• 1 tbsp balsamic reduction
• 1 large tomato sliced into 4 thick slices
• 4 large gherkins sliced lengthways
• 8 lettuce leaves

CARAMELISED APPLE AND BLUE CHEESE BEEF BURGER WITH RED CABBAGE SLAW

• 1 medium Granny Smith Apple cored and thinly sliced 2
• 1/2 cup blue cheese crumbled
• 3 tbsp walnuts chopped
• 1 cup red cabbage shredded
• 2 tbsp good quality mayonnaise
• 1/2 tsp sugar

CLASSIC AVO AND BACON BEEF BURGER WITH SWEET BASIL TOMATO RELISH

• Cook the beef patties on a high heat for 3 – 5 minutes, flipping them half way.
• Place the bacon rashers on a baking tray and cook under the grill until just crispy.
• In a small pot heat the olive oil and add the chopped onions, garlic and sugar.
• Cook until they are translucent, then add the tin of tomatoes, tomato sauce, basil leaves, balsamic reduction and freshly ground salt and pepper.
• Stir, then allow to simmer for 15 – 20 mins until the liquid has reduced.
• Remove from the heat, allow to cool a bit, then blitz with a hand held blender until it resembles a thick pulp. Be careful not to blend it too much.
• Halve and lightly toast the burger buns in a moderately hot pan that has been brushed with olive oil.
• To build the burgers, start off placing the bottom of the toasted burger buns on individual plates.
• Top with lettuce leaves, gherkins, slices of tomatoes and the beef patties. Add a spoonful or two of tomato relish on top, then the bacon rashers and lastly the slices of avo.
• Season with a grind or two of freshly ground salt and pepper.
• Place the lid of the burger bun on top and serve immediately.

BARBECUE BURGER WITH CHEDDAR CHEESE AND CARAMELISED ONIONS

• Cook the beef patties on a high heat for 3 – 5 minutes, flipping them half way.
• Melt the butter and 1 tablespoon of the olive oil in a pan on a moderate heat.
• Add the sliced onions, sugar and cook until tender and caramelised.
• In a small pot heat tomato sauce, apple cider vinegar, maple syrup, tabasco sauce and crushed garlic.

• Place the cooked beef patties on a baking tray and top each one with a slice of cheese, place under a heated grill for 1 – 2 mins until melted.
• Halve and lightly toast the burger buns in a moderately hot pan that has been brushed with olive oil.
• To build the burgers, start off placing the bottom of the toasted burger buns on individual plates.
• Top with lettuce leaves, gherkins, slices of tomatoes and the cheddar beef patties. Add a spoonful or two of barbecue sauce on top of this and then the caramelised onions.
• Place the lid of the burger bun on top and serve immediately.

• Mix the shredded red cabbage and mayonnaise together in a bowl and season with freshly ground salt and pepper.
• Place the apple slices in a pan of melted butter, drizzle with sugar and gently cook until they are caramelised.
• Halve and lightly toast the burger buns in a moderately hot pan that has been brushed with olive oil.
• To build the burgers, start off placing the bottom of the toasted burger buns on individual plates.
• Place a handful of red cabbage slaw on top an then a burger patty.
• Place a handful of red cabbage slaw on top an then a burger patty.
• Top with two slices of caramelised apples, some crumbled blue cheese and chopped walnuts.
• Place the lid of the burger bun on top and serve immediately.

• Place the lid of the burger bun on top and serve immediately.
