This grape and lemon loaf is not only really pretty to look at, it is also quite simply, delicious. Grapes might not be the first ingredient that pops into your mind when thinking of baking, but this recipe will definitely change that. The delicate sweetness of the grapes pair perfectly with the citrus tang of the lemon and the richness of the yoghurt. Enjoy while grapes are in season and abundant.

1/2 cup butter
1 cup castor sugar
1/4 cup freshly squeezed lemon juice
1 tbsp lemon zest
3 eggs
1 1/2 cup all purpose flour
1 1/2 tsp baking powder
pinch of salt
1/4 milk
1 cup fresh seedless grapes, halved
YOGHURT FROSTING
1 cup icing sugar
1/2 cup full cream yoghurt
2 tsp lemon zest
TO DECORATE
Crystallize seedless grapes
4-5 fresh figs, quartered
1/4 cup chopped almonds

In a bowl, cream the butter and castor sugar together.
Add the eggs one at a time, mixing well
Stir the lemon juice and lemon zest into the milk and add this to the egg mixture, combining well.
Sieve the flour, baking powder and salt into a separate bowl.
Add the bowl of flour ingredients to the eggs and gently fold together, making sure not to over beat. Grease a loaf tin and pour in half the cake mixture.
Sprinkle the halved grapes over this, then cover with the rest of the cake batter.
Bake in a preheated, 180º C oven, for 35-40 mins or until a skewer inserted comes out clean.
Remove the tin from the oven and allow the loaf to cool in the tin before removing.
Yoghurt frosting
Mix the icing sugar, yoghurt and lemon zest together in a bowl, until well combined.
Decorating
Place the loaf onto a serving platter or board and spread the yoghurt frosting over the top, allowing it to drip down the sides of the loaf.
Carefully arrange the crystallized grapes and fresh fig quarters on top of the frosting. Sprinkle with the chopped almonds and serve.
