This recipe offers a refreshing and flavorful twist on classic pasta salad. Al dente pasta is tossed with a light and vibrant coriander pesto, then topped with fresh peas, red onion, creamy avocado, and peppery wild rocket. A squeeze of lemon juice and a sprinkle of lemon zest add a touch of brightness, while a pinch of chilli flakes (optional) provides a kick of heat.

250 g penne pasta
100 g Food Lover’s Market Coriander Pesto
125 ml (1/2 cup) fresh peas
½ small red onion, sliced
1 avocado, cubed
50 g rocket
Zest and juice of 1 lemon
10 ml (2 tsp) chilli flakes *optional, to garnish
Salt and black pepper, to taste
Directions
Cook the pasta for about 12-15 minutes or until al dente. Rinse, drain, drizzle with a dash of olive oil and set aside until needed.
Once cooled combine the coriander pesto with the cooked pasta and top with peas, red onion, avocado, and wild rocket.
Sprinkle with lemon zest and drizzle with lemon juice, sprinkle with chilli flakes* to garnish and season to taste.

Al Dente Perfection: Cook your pasta according to package instructions, aiming for al dente (slightly firm to the bite) for the best texture. Don’t overcook the pasta!
