A crunchy, easy quick pickled cucumber relish is a perfect topping to a summer salad or platter accompaniment. It tastes like summer in a jar, incorporating fresh cucumbers, ginger, red onion and chillies. Keep a jar of this quick pickle in the fridge to add to any summer meal, or as a relish for a light curry, like this Thai prawn curry.

60ml (1/4 cup) white wine vinegar
30ml (2 Tbsp) water
60ml (1/4 cup) sugar
2.5ml (1/2 tsp) salt
½ cucumber, quartered and sliced
1 red onion, finely diced
15ml (1 Tbsp) ginger, grated
1 small chili, finely chopped
15ml (1 Tbsp) coriander, finely chopped
Directions
For the Cucumber Relish:
In a small saucepan, simmer the vinegar, water, sugar, and salt together until the sugar has dissolved. Remove from the heat and allow to cool.
Once cooled, stir in the rest of the ingredients.
Serve the curry with the cucumber relish, jasmine rice, and lime wedges.
