A Rosti, is a style of fritter. This is a basic potato and spring onion rosti, simple and easy that everyone will love! You can change up the potato for sweet potato, butternut, or even zucchini, and add your favourite herbs. Serve this rostis with eggs and bacon, or a dash of cream cheese!
This recipe makes 6 – 8 rostis.

750ml (3 cups) potato, peeled and grated
¼ onion, chopped finely
1 egg, beaten
15ml (1 Tbsp) flour
30ml (2 Tbsp) breadcrumbs
2.5ml (½ tsp) garlic powder
2.5ml (1/2 tsp) baking powder
60ml (1/4 cup) spring onion, sliced diagonally
Salt and black pepper, to taste
Directions
Combine all ingredients and mix well until combined.
Heat a large frying pan on a medium heat with a dash of olive oil or butter.
Place tablespoon-sized amounts of the rosti mixture into the pan and fry for about 3-5 minutes per side or until cooked and golden.
