15ml (1 Tbsp) butter
Zest and juice of 1 lemon
200g cherry tomatoes, halved
1/2 cucumber, cubed
2 spring onions, finely sliced
1 small pineapple, cut into cubes
250ml (1 cup) cooked brown rice
1 fresh red chilli, chopped *optional
Salt and black pepper, to taste
60ml (1/4 cup) of your favourite salad dressing

Directions
Devein the prawns and remove the shells. Heat a large frying pan with the butter and fry the prawns until pink and just cooked, finish the prawns with seasoning and the lemon juice and zest.
In a salad bowl combine the cherry tomatoes, cucumber, spring onions, pineapple, and rice. Toss to combine and add the red chilli seasoning and your chosen dressing. Finish the salad with the cooked prawns and salad toppers of your choice.
