Pulled Pork Carnitas
1 kg pork belly roast
1 pineapple, peeled and diced
1 granny smith apple, cut into slices
1/2 red onion, peeled and thinly sliced
1 nectarine, thinly sliced
1 avocado, peeled and diced
Juice of 1 lemon
50 ml olive oil
Soft tortillas
Pulled Pork Carnitas
Preheat the oven to 180°c.
Place the roast on a lined baking tray.
Bake for 90 minutes.
Remove from the oven and set aside.
Shred the pork with two forks and season with salt and pepper.
Lightly fry the tortillas in a dry frying pan until browned.
Top with shredded pork belly, pineapple, apple, red onion and nectarine.
Place the avocado, lemon juice and olive oil into a food processer and blend until smooth.
Spoon dollops of the avo mouse over the carnitas and garnish with fresh mint.
Serve and enjoy.
