Nothing quite like avocado on toast…but this avo open sandwich will take flavours to new heights, and is a simple way to make a gourmet breakfast or lunch. Roast some beautiful little cherry tomatoes, enjoy them with a homemade herb oil atop your avocado on toast.

For the Spice Mix:
5ml (1 tsp) chilli flakes
5ml (1 tsp) Maldon salt
5ml (1 tsp) paprika
2.5ml (1/2 tsp) cayenne pepper
For the Herb Oil:
45ml (3 Tbsp) African Gold Extra Virgin Olive Oil
80ml (1/3 cup) basil
80ml (1/3 cup) parsley
Zest of 1 lemon
15ml (1 Tbsp) lemon juice
Salt and pepper to taste
For the Avo Sandwich
1 Fuerte avocado, cut in half and thinly sliced
2 slices Food Lover’s Market German Landbrot, toasted
150g cherry tomatoes, roasted
15ml (1 Tbsp) almonds, toasted and roughly chopped
Directions
For the spice mix: In a medium size bowl, mix all the spice mix ingredients until combined.
For the herb oil: Blend all the herb oil ingredients together in a blender until smooth.
Assemble the sandwich: Place the sliced avocado on the toasted bread and top with the roasted cherry tomatoes. Sprinkle with the spice mix followed by a drizzle of herb oil. Finish with the toasted almonds and enjoy!
