A perfect treat for a banting or low carb lifestyle, or just want a healthier, sugar-free cake. This Spiced Carrot Cake recipe is thanks to Banting BLVD; using their HEBA mix and xylitol as a sugar-substitute, topped with a zesty creamy cheese frosting.

1 packet HEBA 200g
1 Tbsp baking powder
1 Tbsp cinnamon
1 Tbsp mixed spice
1/2 Tsp nutmeg
1 tsp cardamom (optional)
1/4 cup + 1 Tbsp xylitol
1/3 cup chopped walnuts
4 large eggs
2 cups of full cream milk
2 Tsps vanilla essence
2 Tbsps coconut oil
1 cup finely-grated carrots
Cream Cheese Icing (*Frosting)
1/4 cup xylitol
1 tsp vanilla
Zest and juice of 1 lemon
2 Tbsp cream
250 ml cream cheese
Directions
Preheat the oven to 180ºC and prepare a loaf tin
Mix all the dry ingredients together. Pulse the walnuts in the blender for roughly-chopped pieces. In a separate bowl, whisk the wet ingredients together.
Combine the wet and dry ingredients and mix well. Pour into prepared loaf tin and bake for 60 to 70 minutes or until a toothpick comes out clean. Let it cool down and start with the topping.
Cream Cheese Frosting
Blend everything together until smooth. Spread gently onto spiced carrot cake.
