For the Steak Salad:
400g 28-day matured Karan Beef sirloin steak
1 sweetcorn
¼ lettuce head, shredded
1/2 English cucumber, chopped
250g Spanish Santé cocktail tomatoes, halved
2 mixed bell peppers, deseeded and julienned
2 wheels Food Lover’s feta cheese
For the Avocado and Lime Dressing:
1 avocado
Zest and juice of 1 lime
15ml (1 Tbsp) apple cider vinegar
45ml (3 Tbsp) Food Lover’s blended seed and extra virgin olive oil
45ml (3 Tbsp) sour cream
Handful of fresh coriander or parsley
Salt and black pepper, to taste
Directions
For the Steak Salad:
Heat a griddle pan on a high heat. Season the steak with salt and black pepper. Sear the steak for about 8 minutes and browned or until cooked to your liking. Set aside and cover with foil to allow the meat to rest.
Rub the sweetcorn with some Food Lover’s blended seed and extra virgin olive oil and cook on a high heat, rotating to ensure all sides are charred, for about 3-5 minutes. Set aside to cool and once cooled, cut off the charred corn kernels.
Combine the lettuce, cucumber, tomato and bell pepper in a serving bowl. Finish the salad with the charred corn and feta cheese. Just before serving, cut the seared steak into strips and add to the salad.
For the Avocado and Lime Dressing:
Combine all ingredients into a blender and season to taste. Blend until smooth and serve with the steak salad.
