For the salad:
200g baby spinach leaves
2 green kiwifruit, peeled and sliced into rounds
A handful of strawberries, sliced
2 rounds of feta cheese, crumbled
A handful of pistachios, deshelled and roughly chopped
For the dijon vinaigrette:
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 tablespoon white wine vinegar
1 garlic clove, finely chopped
½ cup extra-virgin olive oil
Salt and freshly ground black pepper
Directions
In a bowl, toss together all the ingredients for the salad. Transfer to your serving dish.
To make the vinaigrette, whisk the lemon juice, Dijon mustard, vinegar, and garlic in a medium bowl. Gradually whisk in oil. Season to taste with salt and pepper.
Drizzle the vinairgette over the salad and serve.
