Live every day like it’s Taco Tuesday with this delicious vegetarian Black Bean Taco Salad! It’s loaded with veggies and drizzled with a delicious homemade creamy salsa dressing of your choice.

1 can tinned black beans
1 tin sweetcorn kernels
¼ head lettuce, shredded
2 tomatoes, deseeded and diced
1 bell pepper, of your choice
1 ripe avocado
1 lemon
Fresh or marinated jalapeño* optional
Store bought salsa
Corn chips, to serve
El Burro Chipotle Chilli & Lime salt, to taste
Directions
Drain and rinse the black beans and sweetcorn.
On a platter arrange the lettuce, tomatoes, and peppers, top with the black beans and corn.
Cut the avo in half, remove the pip and scoop out the flesh and drizzle with some lemon juice to prevent browning and press the avo fine with a fork. Add to the salad. Mash the avo gently with a fork
If you like a kick, sprinkle the jalapeño on the salad. Season the salad with the El Burro Chipotle Chilli & Lime salt, to taste.
Serve the salad with store-bought salsa and corn chips.
