For the Caramelised Onions:
30 ml (2 Tbsp) vegetable oil
3 onions, sliced
Pinch of salt
10 ml (2 tsp) brown sugar
5 ml (1 tsp) white wine vinegar
For the Mayo:
375 ml (1 1/2 cups) neutral flavoured mayonnaise
2 cloves garlic, minced
1 red onion, finely chopped
3 small pickles, finely chopped
10 ml (2 tsp) paprika
30 ml (2 Tbsp) rice wine vinegar
Salt and pepper, to taste
To Serve:
8 hot dog rolls
8 Food Lover’s Market Smoked Viennas, heated
Tomato sauce, to taste
Spring onions, to garnish
Directions
For the Caramelised Onions:
Place a large non-stick pan on a medium heat and add the oil. Add the onions and salt, cook down slowly until the onions start to brown and soften. If they begin to catch, add a little bit of boiling water to the pan, stirring every now and then.
After 30 minutes, add the brown sugar and balsamic vinegar. Stir well until the sugar has dissolved and the vinegar has cooked out.
For the Mayo:
In a separate bowl, combine the mayonnaise, garlic, red onion, paprika, rice wine vinegar, salt and pepper to taste. Mix well and set aside.
To Serve:
To heat the viennas, heat a non-stick griddle pan on medium-low heat. Add the viennas and turn as each side starts to brown, remove from the pan.
Slice the hot dog buns from the top, this will prevent the toppings from easily falling out of the bun. Serve with the mayonnaise, caramelised onions and tomato sauce. Top with spring onions and enjoy.
