Hot potatoes are tossed through a warm mustard vinaigrette with crispy bacon and onions, creating the best ever potato salad! Wash and boil the baby potatoes in salted water for about 15-20 minutes or until cooked.
While the potatoes are cooking, heat a frying pan on a moderate heat, add the bacon and fry until crispy. Remove the bacon from the pan, leaving the bacon fat in the pan.
Add the onion and fry for 2-3 minutes while stirring add the garlic and fry for another 2 minutes. Add both mustards, lemon zest, juice, spring onions and parsley.
Turn off the heat and add the baby potatoes, season to taste and enjoy!
