80g Food Lover’s Market Baby Spinach, Rocket and Basil
200g watermelon, cubed
200g Food Lover’s feta cheese
40g Fresh Rocket
Baby Spinach
Fresh Watercress (*optional)
Dill and chilli dressing
80 ml (1/3 cup) Food Lover’s Market Signature Olive Oil
Zest and juice of 1 lemon
10 ml (2 tsp) dill, roughly torn
5 ml (1 tsp) chilli flakes
Salt and pepper, to taste
Arrange the mixed leaves on a serving platter and top with watermelon cubes, feta and dill.
For the dressing place all ingredients in a glass jar, shake until emulsified and season to taste.
Dress the salad with the salad dressing just before serving.
