Watermelon Rind Tzatziki
250ml (1 cup) watermelon rind, grated
250ml (1 cup) Food Lover’s Plain Yoghurt
15ml (1 Tbsp) olive oil
15ml (1 Tbsp) lemon juice
Zest of ½ a lemon
15ml (1 Tbsp) mint, finely chopped
Salt and pepper, to taste
Serve with Grilled Chicken Gyros:
4 pita breads
30ml (2 Tbsp) olive oil
2 tomatoes, cut into small cubes
½ a cucumber, cut into small cubes
½ a red onion, thinly sliced

Watermelon Rind Tzatziki
In a large bowl, combine all the ingredients and mix well. Set aside.
For the Grilled Chicken Gyro:
In a large bowl, combine the first eight ingredients and mix well. Add the chicken strips and stir until well coated. Cover and place in the fridge to marinate for 1-2 hours.
Using a griddle pan over medium heat, cook the marinated chicken until golden brown and cooked through.
In a griddle pan over medium heat, brush the pitas with the oil and place them in the pan to toast slightly and get some colour.
Smear the watermelon rind tzatziki onto the pitas and top with the grilled chicken, tomato, cucumber, and red onion.
Fold the pita around the fillings and enjoy.
