A spicy, whole roasted cauliflower is great for a plant-based alternative to a classic roast. Even meat eaters will want a piece of this impressive, high-fibre veg dish. Not can this recipe be made into a vegan recipe, but it’s also low carb.

For the Roasted Cauliflower:
45ml (3 Tbsp) butter or plant-base margarine, melted
15ml (1 Tbsp) Food Lover’s Signature Extra Virgin Olive Oil
2.5ml (1/2 tsp) chilli flakes
Zest of 1 lemon
Salt and pepper, to taste
Directions
For the Roasted Cauliflower:
Preheat your oven to 180°C.
In a medium sized bowl, combine all ingredients except the cauliflower and mix well.
Place the cauliflower head on a large piece of tinfoil and generously brush the butter mixture on until evenly coated. Wrap the cauliflower in the tinfoil and place on a tray. Cook for 40 – 50 minutes until soft, then place the cauliflower back in the oven uncovered for 10 minutes.
Alternatively, air fry at 180°C for 30 – 40 minutes and 5 minutes uncovered.
Serve warm with the herb sauce and enjoy.
For the Herb Sauce:
In a medium sized bowl, combine all the ingredients and mix well.
