Yellowtail is equally great cooked on the Braai or in the oven. Here we have taken the whole fish and dressed it in lemon and limes, drizzled it with a sweet and spicy Asian dressing, then baked it in the oven until juicy and tender.

  • Prep: 10 mins
  • Cook: 35 mins
  • Yields: 6-8 Servings

1 Whole yellowtail, cleaned and scaled

1 lemon cut into slices

2 limes cut into slices

1 handful fresh coriander

Freshly ground salt and pepper

Asian Dressing:

1/2 cup soy sauce

1 tbsp olive oil

2 cloves garlic crushed

3 tbsp honey

1 tbsp fresh ginger

1 tbsp lemon juice

1 small chilli finely chopped

1Place all the ingredients for the Asian dressing in a bowl and mix together well.

2Place the cleaned and gutted yellowtail on a baking tray. Score the fish on both sides, with 2 cuts. Using a basting brush, liberally coat the fish inside and out, with the Asian dressing.

3 Stuff the scored cuts and cavity of the yellowtail with the lemon slices, lime slices and fresh coriander.

4 Pour the rest of the dressing over the fish.

5Season with freshly ground salt and pepper, then place the baking tray in a preheated 200 C oven for 25-30 mins, until the fish skin is crispy and the flesh, tender and opaque.

6Serve immediately with lemon and lime wedges.
