GOURMET BEEF BURGER TOPPINGS

Burgers, traditionally real American fair, have been enjoyed around the world for many years, but in this day and age you cannot go to too many places without being bombarded by a load of burger joints touting there mouth watering fair. Don't be afraid to experiment with various flavours and combinations at home either. Here we have taken a few classics and given them a bit of a twist

Ingredients

4 Burger Buns

4 x 100% beef burger patties .

BACON, BRIE AND BLUEBERRY BURGER WITH CARAMELISED ONIONS

12 rashers of streaky bacon

8 slices of Brie cheese

4 heaped teaspoons of blueberry jam

1 large onion halved and thinly sliced

1 1/2tbsp extra virgin olive oil

1/2 tbsp butter

1 tsp sugar

1 large tomato sliced into 4 thick slices

8 butter lettuce leaves

CARAMELISED APPLE AND BLUE CHEESE BEEF BURGER WITH RED CABBAGE SLAW

1 medium Granny Smith Apple cored and thinly sliced

1/2 cup blue cheese crumbled

3 tbsp walnuts chopped

1 cup red cabbage shredded

2 tbsp good quality mayonnaise

1/2 tsp sugar

BARBEQUE BURGER WITH CHEDDAR CHEESE AND CARAMELISED ONIONS

4 thick slices of strong cheddar cheese

1 large onion halved and thinly sliced

1 1/2tbsp extra virgin olive oil

1/2 tbsp butter

1 tsp sugar

1 cup tomato sauce

1 tbsp apple cider vinegar

1/2 cup maple syrup

1 tbsp jimmy's sauce

1 tsp tabasco sauce

1 clove garlic crushed

1 large tomato sliced into 4 thick slices

4 large gherkins sliced lengthways

CLASSIC AVO AND BACON BEEF BURGER WITH SWEET BASIL TOMATO RELISH

1 ripe avocado cut into slices lengthways

8 rashers of streaky bacon

1 onion chopped

2 cloves garlic chopped

1 tin chopped tomatoes

1 small handful basil leaves

3 tsp sugar

1 tbsp extra vigil olive oil

1/4 cup tomato sauce

1 tbsp balsamic reduction

1 large tomato sliced into 4 thick slices

4 large gherkins sliced lengthways

8 lettuce leaves

Directions

BACON, BRIE AND BLUEBERRY BURGER WITH CARAMELISED ONIONS

1Cook the beef patties on a high heat for 3 - 5 minutes, flipping them half way. Place the bacon rashers on a baking tray and cook under the grill until just crispy. Melt the butter and 1 tablespoon of the olive oil in a pan on a moderate heat. Add the sliced onions, sugar and cook until tender and caramelised. Halve and lightly toast the burger buns in a moderately hot pan, that has been brushed with the rest of the olive oil. To build the burgers, start off placing the bottom of the toasted burger buns on individual plates. Top with lettuce, tomato slices, bacon and a beef patty on each bun. Top with a tablespoon of caramelised onions, slices of Brie cheese and lastly a heaped teaspoon of blueberry jam. Place the lid of the burger bun on top and serve immediately.

CARAMELISED APPLE AND BLUE CHEESE BEEF BURGER WITH RED CABBAGE SLAW

1Cook the beef patties on a high heat for 3 - 5 minutes, flipping them half way. Mix the shredded red cabbage and mayonnaise together in a bowl and season with freshly ground salt and pepper. Place the apple slices in a pan of melted butter, drizzle with sugar and gently cook until they are caramelised. Halve and lightly toast the burger buns in a moderately hot pan that has been brushed with olive oil. To build the burgers, start off placing the bottom of the toasted burger buns on individual plates. Place a handful of red cabbage slaw on top an then a burger patty. Top with two slices of caramelised apples, some crumbled blue cheese and chopped walnuts. Place the lid of the burger bun on top and serve immediately.

BARBECUE BURGER WITH CHEDDAR CHEESE AND CARAMELISED ONIONS

1Cook the beef patties on a high heat for 3 - 5 minutes, flipping them half way. Melt the butter and 1 tablespoon of the olive oil in a pan on a moderate heat. Add the sliced onions, sugar and cook until tender and caramelised. In a small pot heat tomato sauce, apple cider vinegar, maple syrup, tabasco sauce and crushed garlic. Bring to a boil, then allow to reduce for 20 - 30 mins at a simmer. Once it has thickened, leave it to cool. Place the cooked beef patties on a baking tray and top each one with a slice of cheese, place under a heated grill for 1 - 2 mins until melted. Halve and lightly toast the burger buns in a moderately hot pan that has been brushed with olive oil. To build the burgers, start off placing the bottom of the toasted burger buns on individual plates. Top with lettuce leaves, gherkins, slices of tomatoes and the cheddar beef patties. Add a spoonful or two of barbecue sauce on top of this and then the caramelised onions. Place the lid of the burger bun on top and serve immediately.

CLASSIC AVO AND BACON BEEF BURGER WITH SWEET BASIL TOMATO RELISH

1Cook the beef patties on a high heat for 3 - 5 minutes, flipping them half way. Place the bacon rashers on a baking tray and cook under the grill until just crispy. In a small pot heat the olive oil and add the chopped onions, garlic and sugar. Cook until they are translucent, then add the tin of tomatoes, tomato sauce, basil leaves, balsamic reduction and freshly ground salt and pepper. Stir, then allow to simmer for 15 - 20 mins until the liquid has reduced. Remove from the heat, allow to cool a bit, then blitz with a hand held blender until it resembles a thick pulp. Be careful not to blend it too much. Halve and lightly toast the burger buns in a moderately hot pan that has been brushed with olive oil. To build the burgers, start off placing the bottom of the toasted burger buns on individual plates. Top with lettuce leaves, gherkins, slices of tomatoes and the beef patties. Add a spoonful or two of tomato relish on top, then the bacon rashers and lastly the slices of avo. Season with a grind or two of freshly ground salt and pepper. Place the lid of the burger bun on top and serve immediately.
