For the Sweet Potato Crisps:
2 white sweet potatoes
10ml (2 tsp) smoked paprika
Sea salt
For the Herb Dipping Sauce:
45ml (3 Tbsp) basil pesto
125ml (1/2 cup) plain double thick yoghurt
Handful of chives, chopped
Zest and juice of 1 lemon
Salt and black pepper, to taste
Directions
For the Sweet Potato Crisps:
Wash the sweet potato and thinly cut it in wheels. Sprinkle with smoked paprika and salt.
Place the rounds on a plate lined with baking paper.
Microwave on high for 2 minutes.
Serve with a dipping sauce.
For the Herb Dipping Sauce:
Mix together all ingredients and season to taste.
