Microwave Sweet Potato Crisps & Dipping Sauce

For the Sweet Potato Crisps:

  • 2 white sweet potatoes
  • 10ml (2 tsp) smoked paprika
  • Sea salt

For the Herb Dipping Sauce:

  • 45ml (3 Tbsp) basil pesto
  • 125ml (1/2 cup) plain double thick yoghurt
  • Handful of chives, chopped
  • Zest and juice of 1 lemon
  • Salt and black pepper, to taste


For the Sweet Potato Crisps:

  1. Wash the sweet potato and thinly cut it in wheels. Sprinkle with smoked paprika and salt.
  2. Place the rounds on a plate lined with baking paper.
  3. Microwave on high for 2 minutes.
  4. Serve with a dipping sauce.
  5. For the Herb Dipping Sauce:

    1. Mix together all ingredients and season to taste.
