Ingredients

2-3 Tru Cape apples, cored and very thinly sliced
1/4 cup brown sugar
1 teaspoon ground cinnamon
1 sheet frozen puff pastry, thawed
1/4 cup melted butter
1 teaspoon castor sugar (optional)
1 teaspoon icing sugar (optional)

Directions

Preheat your oven to 180 degrees
Butter 4 large ramekins and dust with white sugar. (You can also use a muffin pan to create six -12 smaller apple roses).
Place apple slices on a plate, overlapping slightly. Microwave on High for about 45 - 60 seconds just until slices have softened. Cover the plate with cling wrap and place a kitchen towel on top.
Melt the butter in the microwave and mix together sugar and cinnamon.
Roll puff pastry sheet to 3mm thickness. Using a pizza cutter or knife, cut four rectangles or strips.
Spread the melted butter and sugar, cinnamon mixture over the puff pastry sheets.
Place the apple slices along the edge of the puff pastry, about 1/4 inch beyond edge of the puff pastry, overlapping slices slightly.
Fold the bottom half of the puff pastry over the apple slices, with the rounded edges of apple slices slightly visible.
Spread the remaining butter mixture over the puff pastry fold.
Starting from one end, roll the puff pastry, to form a rose-shaped pastry. Make sure not to roll it too tight.
Transfer the apple roses to the ramekins.
Sprinkle with a little castor sugar on top.
Place the ramekins directly on the middle rack of the preheated oven.
Bake until well browned, for about 45 minutes.
Remove the ramekins and let it cool for 5 to 10 minutes.
Remove the apple roses from the ramekins and finish cooling on rack.
Dust with some icing sugar before serving.
Serve as is, or with some custard, cream or ice cream on the side.
