For the Broth:
15 ml (1 Tbsp) vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1 thumb ginger, grated
1 chilli, finely chopped
1 L (4 cups) beef stock
750 ml (3 cups) water
45 ml (3 Tbsp) light soy sauce
30 ml (2 Tbsp) rice wine vinegar
200 g (2 squares) Food Lover’s Market Egg Noodles
For the Toppings:
15 ml (1 Tbsp) vegetable oil
2 carrots, thinly sliced
1 punnet exotic mushrooms
250 ml (1 cup) baby spinach
2 soft boiled eggs, sliced lengthwise
1 sheet nori, thinly sliced into strips
1 spring onion, thinly sliced
1 red chilli, thinly sliced
Sesame seeds, to taste
Directions
For the Broth:
In a medium sized bowl over medium heat, add the oil and sauté the onions until soft. Add the garlic, ginger and chilli, cook for 1 minute.
Add the beef stock, water, light soy sauce and rice wine vinegar. Simmer for 10 minutes. Add the egg noodles and simmer for another 5 minutes until cooked.
For the Topping:
In the meantime, place a non-stick frying pan with the oil over medium-high heat. Fry the carrots and exotic mushrooms until golden brown.
Serve the broth and noodles in your chosen bowls and top with the carrots, mushrooms, baby spinach, egg, nori, spring onions, chilli and sesame seeds. Enjoy!
