Zest of 1 lemon
Directions
For the Raw Chocolate Brownie:
Prepare a 20x20cm square dish by spraying with B-well Canola Baking Spray.
Place the walnuts and almonds in a food processor and process until roughly chopped. Do not process into a flour. Add the dates, cocoa powder, vanilla and sea salt. Process until all the ingredients are well mixed and add 60ml (¼ cup) of water, or just enough to make the mixture stick together. The mixture should look well blended with no large chunks of nuts. If needed, you can add more water, but only 15ml (1 Tbsp) at a time.
Press the mixture into the prepared baking dish and allow the brownie to set in the fridge for at least an hour.
For the Caramel Icing (Optional):
Place all ingredients into a food processor and blend until well combined. Pour the topping over the brownie and allow to set for another 30 minutes.
For the Blueberry Compote (Optional):
Blitz all ingredients until fine and serve along with the brownie.
