For the Streusel Topping:
125ml (1/2 cup) brown sugar
30ml (2 Tbsp) white sugar
30ml (2 Tbsp) flour
2.5ml (1/2 tsp) cinnamon
Pinch of salt
20ml (4 tsp) butter, melted
For the Cake:
180ml (3/4 cup) butter, softened
180ml (3/4 cup) castor sugar
10ml (2 tsp) vanilla extract
2 large eggs
250ml (1 cup) cake flour
5ml (1 tsp) baking powder
60ml (1/4 cup) milk
Zest and juice of 1 lemon
125g Food Lover’s Buzzing Blueberries
Directions
For the Streusel Topping:
In a medium sized bowl, combine the first five ingredients together and mix well. Gently stir in the melted butter until combined but still clumpy. Be careful not to overmix or a paste will form.
For the Cake:
Preheat the oven to 180°C and line a 12 cm x 22 cm loaf tin with parchment paper and non–stick spray.
In a large bowl using a handheld electric beater, beat the butter and sugar together until light and fluffy. Add the vanilla extract and beat again for a few seconds.
Add the eggs one at time, beating the mixture after each egg. Fold in half the flour and baking powder, then half the milk. Repeat, then fold in the lemon zest, lemon juice and blueberries.
Pour into the prepared baking tin and top with the streusel topping.
Bake for 40 – 45 minutes or until golden brown on the top and a skewer comes out clean. Transfer onto a wire rack and allow to cool before enjoying.
