For the Tacos:
4-6 chicken breasts
15ml (1 Tbsp) Cajun spice
250ml (1 cup) Food Lover’s Smokey BBQ Sauce
Handful of coriander, chopped
Salt and black pepper, to taste
8-12 hard shell tacos
1 avocado, mashed
Fresh coriander, to taste
For the Spicy Mayo:
80ml (1/3 cup) Food Lover’s Canola Mayo
45ml (3 Tbsp) hot sauce
Salt and black pepper, to taste
For the Tacos:
Season the chicken breasts with salt, black pepper and Cajun spice and cook for about 15 minutes at 180°C in the air fryer. Once cooked shred the chicken and combine with the BBQ marinade and coriander, set aside until needed.
For the Salsa:
Combine all salsa ingredients, season to taste and set aside until needed.
For the Spicy Mayo:
Combine all ingredients, season to taste and set aside until needed.
To Assemble:
Mash the avo, season to taste and add a squeeze of lemon juice. Pop the taco shells into the oven for 4 minutes to crisp up. Now add the chicken to the taco shells, followed by the salsa, spicy mayo and mashed avocado.
Garnish with fresh coriander and enjoy immediately.
