This classic salad features tender asparagus, baby potatoes, fresh lettuce leaves, savoury black olives, and flavourful tuna. 100g asparagus
250ml (1 cup) baby potatoes, halved
250ml (1 cup) lettuce leaves
100g (1 packet) Food Lover’s black olives, halved
2 tins Food Lover’s tuna in brine, drained
Zest and juice of 1 lemon
30ml (2 Tbsp) Italian parsley, chopped
125ml (1/2 cup) Knorr French Light Salad Dressing
2 eggs, boiled to taste
Salt and black pepper, to taste
Directions
Place the asparagus in a deep dish and boil a kettle of water. Pour the boiling water over the asparagus and leave for about 5 minutes before draining.
Parboil the baby potatoes for about 10 minutes. Drain and place in an air fryer with a dash of olive oil and salt for about 15 minutes on 180°C.
In a large salad bowl, add the lettuce leaves, blanched asparagus, baby potatoes, olives, tuna, lemon zest and juice and parsley, toss well.
Top with the French Light Salad Dressing and boiled eggs. Season to taste.
