This is how to extend the life of your potatoes

Potatoes are among the most popular vegetables in the world and are the fifth most valuable crop. This is, no doubt, because of how versatile it is. From creamy mash to cheesy bakes to French fries, spuds are a comfort food for many (hello, slap chips!) and a staple South African side (like the potato salad at a braai). A source of carbohydrates, they aren’t all starch and also contain vitamins and minerals necessary for good health. 

The humble potato already has quite a long shelf life when compared to other fresh produce. But, how you store them matters if you want to make sure they go the distance. Here are four ways to extend their freshness so they remain edible for longer. 

TIP #1: Keep it cool + dark

The ideal environment to store potatoes to improve their longevity is one that is cool, dry and gets minimal light, such as a pantry or kitchen cupboard. 

TIP #2: Don’t refrigerate them

While it might tick the cool and dark box, the moisture inside a fridge can make potatoes become mouldy. The cold temperature can also affect the taste.  

DID YOU KNOW There are over 5 000 potato species across the globe. In SA, we typically eat varieties named Buffelspoort, Russet and Mondial.  

TIP #3: Put them in paper

If your potatoes come in a plastic bag, remove them from it and keep them in a paper bag, instead. This allows for ventilation so that the environment doesn’t get damp. 

TIP #4: Keep cooked ones sealed

Cooked potatoes can last for up to four days in the fridge. Store them in a container or bag that seals so they don’t absorb other flavours. 

DID YOU KNOW If exposed to too much direct light, potatoes produce a toxin called solanine and turn green. These can make you sick so toss them away!
