For the caramelised onions:

  • 2 medium onions, sliced
  • 15ml (1 Tbsp) olive oil
  • 30ml (2 Tbsp) brown sugar

For chorizo and bacon filling:

  • 10ml (2 tsp) olive oil
  • 200g bacon, diced
  • 225g chorizo, sliced diagonally

To assemble:

  • 2 x Food Lover’s Market French loaves (35cm)
  • 60ml (¼ cup) tomato purée
  • 1 tomato, diced
  • 112g fresh mozzarella (Bocconcini), torn
  • 60ml (¼ cup) basil leaves


For the caramelised onions:

  1. Heat olive oil in a pan over low heat.
  2. Add the onion slices. Cook the onions for 20 minutes until soft. Add the sugar and cook for 5 minutes until golden brown.
  3. For the filling:

    1. Add the olive oil to a medium-sized pan. Heat over medium heat. Add the bacon and chorizo. Cook for 10 minutes until done.
    2. To assemble:

      1. Pre-heat oven to 180°C.
      2. Use a small serrated knife and cut a hole In the French loaf, then spread with tomato purée. Layer the loaf with tomato, bacon and chorizo filling, and top with mozzarella and caramelised onions.
      3. Bake for 15 minutes until browned and garnish with fresh basil leaves.
