Protein ‘Cookie Dough’ in a Mug

This cookie dough in a mug is made with wholesome ingredients, and is a nutritional treat! The humble chickpea is so versatile, it can be added to a curry, blended into hummus, turned into a vegan chickpea mayo, roasted as a crunchy snack or salad topping, made into cookies OR this delicious cookie dough in a mug inspired by Iron Man! Who knew that pureéing Chickpeas with 7 other healthy ingredients would result in a delicious cookie dough batter that tastes like dessert, which is also loaded with plant protein and fibre, PLUS it can satisfy that sweet tooth. It’s also a great, simple dessert to make for a healthy vegan. It is also grain-free, dairy-free and refined sugar-free.

We give a lentil option instead of chickpeas to this recipe to give you an extra bit of Iron, but it will be slightly more savoury in taste.

Additional Notes

SUBSTITUTIONS:

Nut Butter: We used peanut butter, but you are welcome to substitute this for your favourite nut butter, like Macadamia, Almond, or Cashew.

Flour: If you do not have Almond flour, you can blend up some almonds into ground almonds/flour. OR, you could substitute for oat flour, regular flour, gluten-free flour or another flour or choice. We would not recommend coconut flour or flax flour as you might get a very different consistency.
