Fill your home with the smell of freshly baked scones. These are the ultimate scones to pair with your afternoon cup of tea! Light, flaky, and more savoury than sweet. That means slathering them with whipped cream or cheese, and homemade orange marmalade is obligatory. This homemade scone recipe is a lot easier than you think.

430 ml (1 ¾ cups) self-rising flour plus extra flour for dusting
7.5 ml (1 ½ tsp) baking powder
60 ml (1/4 cup) castor sugar
95 g butter, ice cold
Zest of 1 orange
5 ml (1 tsp) vanilla extract
180 ml (2/3 cup) milk
1 egg, beaten for glazing
Directions
Preheat the oven to 180 °C and line a baking tray with baking paper and spray with non-stick spray.
Sift the flour and baking powder in a large mixing bowl, add the castor sugar and mix well.
Grate the butter into the bowl and add the orange zest. Use your fingertips to rub the butter and flour mixture together until you have a mixture that resembles coarse breadcrumbs.
Gently add the vanilla and milk and combine using a metal spoon to “cut” the mixture into a dough.
Dust some extra flour on the work surface, followed by the dough.
Use your hands to form the dough into a disc of about 3 cm thick. Use a cookie cutter of about 6 cm and cut out as many rounds as possible.
Bring the dough back together and repeat the process until you have formed rounds with all the dough.
Place the scones on the prepared baking tray, glaze with the beaten egg and bake for about 15 minutes or until cooked and golden.
Serve with whipped cream and spiced orange marmalade (see recipe below) or cream and caramelised oranges (optional).
